So don't ask me how or why, but I've decided to give the vegan diet a try. I got some books about it, and I'm liking what I'm reading for the most part. I'll probably post more about this, but let me just say right now that aside from normal baked goods, it's going to be a challenge to give up yogurt, especially when I just finally bought greek yogurt!
Anywho. This week is my nationals competition, so naturally I need food for the trip.
What's vegan and delicious, but not "sweet"?
Granola Bars!
I searched for some but I just decided to make my own. Here they are!
Just 6 Ingredients! And 2-3 of them are optional if you think about it.
Okay so before I do the real story, the pile of granola on the bottom left side is the recipe with vegetable oil instead of the corn syrup (upper right side). Don't use oil, kay thanks.
Simple Vegan Granola Bars!
Makes 10 in a 9x9 Dish
1 1/2 cups Old Fashioned Oats
1/6 Cup Almonds
1/6 Cup Cranberries
1/6 Cup Raisins
1/2 oz Protein Powder (probably completely optional)
5/8 Cup Light Corn Syrup
Just mix all the dry ingredients and add the syrup and mix again! Mis en place. Bake at 350F for 8-10 minutes.
They are a bit crumbly when you cut them, so try cutting them while they are warm and press down on them to pack them together.
Each one has about 100 Calories :)
