Getting Good at This Vegan Thing

So it's day three as a vegan. People pretty much react the same way if I tell them I'm giving veganism a whirl: "OMG Why?!"
Nice.
Whatever. I got more books and it's pretty interesting actually. I LOVE nonfiction reading; call me a geek. Or the daughter of a teacher, which I am.
Anywho. Today's lunch, I must say, was fabulous. I got a recipe for yeastless pizza dough and made a veggie pizza.
See? Pretty good looking, huh? It has Tomato&Basil sauce, spinach, broccoli, and tomatoes. For seasonings I just added some Pizza Seasoning, Basil, and I discovered a love for Oregano so I added more of that.

Vegan

So don't ask me how or why, but I've decided to give the vegan diet a try. I got some books about it, and I'm liking what I'm reading for the most part. I'll probably post more about this, but let me just say right now that aside from normal baked goods, it's going to be a challenge to give up yogurt, especially when I just finally bought greek yogurt! 
Anywho. This week is my nationals competition, so naturally I need food for the trip.
What's vegan and delicious, but not "sweet"?
Granola Bars!
I searched for some but I just decided to make my own. Here they are!
Just 6 Ingredients! And 2-3 of them are optional if you think about it.
Okay so before I do the real story, the pile of granola on the bottom left side is the recipe with vegetable oil instead of the corn syrup (upper right side). Don't use oil, kay thanks.
Simple Vegan Granola Bars!
Makes 10 in a 9x9 Dish
1 1/2 cups Old Fashioned Oats
1/6 Cup Almonds
1/6 Cup Cranberries
1/6 Cup Raisins
1/2 oz Protein Powder (probably completely optional)
5/8 Cup Light Corn Syrup

Just mix all the dry ingredients and add the syrup and mix again! Mis en place. Bake at 350F for 8-10 minutes.
They are a bit crumbly when you cut them, so try cutting them while they are warm and press down on them to pack them together.
Each one has about 100 Calories :)

Smile! Summer Cupcakes!

GUESS WHO'S EXCITED.
You're smart. I am. I got a new camera today. It's awesome. So I HAD to have a photo shoot with the cupcakes I made yesterday! I believe they're my first real decorated cupcakes? Tear tear, a kodak moment.
Actually, it's a Canon moment ;)

 I've been trying and failing at buttercream roses, so I like the simple 1M rose decorating. Nice and easy, and very cute! :)

Maine Man

So my friend is moving to Maine.
She had a going away party and asked for people to bring a treat to share.
Of course, I made cookies.
But what is there in Maine...?
Oh yeah.
Fish.
So, inspired by the lady from Sweet Sugar Belle, I messed around with my cookie cutters and made some fish.
This one uses the pants from a gingerbread boy and a circle. I also used a football for another fish body.
These are my favorite cookies yet!! I just was tickled with the creativity of using those cookie cutters.
